Why do wines like Sauvignon Blanc, Cabernet Franc, Cabernet Sauvignon, Merlot, Carménère and Malbec taste like a bell pepper?  Well, it comes from an specific aroma compound called methoxypyrazine (often called “pyrazines”) and is usually found in higher proportions in the “Bordeaux-family” grapes.  Read more here from Wine Folly....
